The Confraria Chopp da Ilha works with
the delicious Brahma lager which is served
at temperature of about 0o C to 3º
C, as recommended by Brahma with a creamy
colar of about 2,5 cm of thickness. Although
many people think it’s strange to
have such a big collar, research has shown
that the best lager is served like that
so come and see for yourself.
The function of the collar is very important
for it retains the gas and keeps the larger’s
taste for longer! The whole lager process
starts with the barrils which are stored
in order of aging date. Our bar doesn’t
work with expired lager, afterall, who likes
old lager? Before the barrils are open they
are stored in a cooling counter between
2º to 7º C so that they don’t
lose their characteristic and so as to guarantee
that they are in cold liquid form when opened.
After the barrils are opened the precious
liquid goes through a cooling process and
another one of gasing until it comes to
the last stage, when it goes through a coil
in ice. To remove the lager, the first step
is to remove liquid from the tap which has
practically no foam, and the second step
is to get it in the second tap which is
foamy and nice. So as to guarantee the foamy
characteristic of the lager, all the glasses
are washed with neutral detergent.
